Then, in a stroke of genius, they embraced natural coffee processes in 2018, tinkering with fermentation control like mad scientists in a lab. PROCESS DESCRIPTION: 
The journey of Maragesha 1561 begins with the careful selection of Maragesha coffee cherries, a rare hybrid variety celebrated for its complex and elegant profile. Harvested at peak ripeness, the cherries are immediately transferred to hermetic tanks for a 96-hour anaerobic fermentation. This oxygen-free environment allows the beans to develop deep fruit-forward characteristics, enhancing their natural sweetness and refining their acidity.

Following fermentation, the cherries are meticulously dried on raised beds for 25 days. This slow and controlled drying process ensures even dehydration, preserving the coffee’s intricate flavors and aromatic depth. Sun-drying on raised beds enhances clarity and structure in the cup, allowing the rich caramel and red fruit notes to fully develop while maintaining the variety’s signature vibrancy.

To further refine its complexity, Maragesha 1561 undergoes a 30-day stabilization period in GrainPro bags.
