Carbonic Maceration
This coffee went through an Alcoholic fermentation combined with an injection of CO2 to have a maceration during this process, this combination develops a high intensity but at the same time really elegant notes, after this, it was slowly dried at shaded beds to have a 30 day drying phase with 1 stall of 5 days in between the drying to promote a pre stabilization, and finished with 45 days of stabilization before milling
